XANTHAN:
- is a multi-functional thickener possessing several key
functional properties including great pH stability, excellent
emulsion stabilizing ability and good particulate suspension
characteristics. These features make Xanthan gum the stabilizer
of choice for salad dressing, salsas, acidic beverages and
liquid, nutritional feeding preparations. Xanthan gum is
rapid hydrating and cold soluble making it highly useful
in instant beverages and desserts, such as chocolate mousse.
Xanthan has excellent moisture retention properties preserving
the shelf life of various baked items, such as cakes, and
its excellent heat stability helps the consistency and stabilization
of various thermally processed foods, particularly retorted
soups and pet foods.
