Low Carbs
Galactomannans (Guar, Locust Bean and Fenugreek Gums):
These natural polysaccharides contribute soluble (low-caloric)
fiber to a variety of food systems dairy, baking and prepared
foods (sauces, spreads and gravies) while providing body,
thickening, mouthfeel, and stabilization to these products.
Guar is a preferred binding agent in low carb breads and
other bakery products holding together the matrix of fiber
and other non caloric ingredients while also binding moisture
and extending freshness. Additionally, guar helps lower
serum cholesterol and fenugreek (Fenupure) is very functional
in lowering post-prandial glucose levels. All of these galactomannans
are very effective in partially replacing high calorie starches
in a wide variety of food systems.
