ALGINATES:
- are offered in several viscosity grades, sodium and potassium
salt forms, possess pure white color and are held in refrigerated
storage to ensure optimum performance and shelf-life. Alginates,
uniquely, form cold set gels that form various structured
foods (fruits, vegetable & meats) and are particularly
suited to making highly stable bakery fillings that are
very resistant to boil-out and degradation during conventional
heating or microwave preparation. Dental and industrial
grades of alginates are also available to meet other, non-food
consumer applications.
